Freshly picked to go with dinner tonight. I’m thinking, spiralling the courgettes, cook in a little oil and ground black pepper, toss in some sweet cherry toms, some of last years borlotti beans I have tucked away (pre soaked and cooked), then adding cooked sliced beet and finish with wilted spinach.
